Fuego Masala
"Fuego" means fire in Spanish. "Masala" means spice blend in Hindi. Together: Fire Spice.
The Story
Fuego Masala was born in the pop-up kitchen at 141 Commercial Street in the heart of the City of London. Joshal had one obsession: create something with the slow-cooked depth of a proper Indian masala but the heat and smokiness of a Mexican chile sauce.
After weeks of testing, this is what emerged. A base that layers warmth without burning you — bold, complex and unapologetically fiery. It became the best seller at the pop-up and the one people kept asking to take home.
Ingredients
What to Cook With It
Marinate overnight, grill and serve in corn tortillas with fresh salsa
Cube and fry the paneer, coat in the base and simmer for 10 minutes
Stir through a tin of black beans and serve on rice with sour cream
Brown the mince, add the base and cook down for 15 minutes
How to Cook It
- Heat a pan on medium-high heat and add a drizzle of oil
- Add your protein or veg and cook for 3 to 4 minutes until sealed
- Pour in the full jar of Fuego Masala base and stir well
- Reduce heat and simmer for 8 to 10 minutes
- Taste, season and serve immediately with rice, naan or tacos
