I’ve spent most of my life chasing flavour. Not the kind you find in recipe books, but the kind that comes from late-night street stalls in Mexico, hidden curry houses in India, family-run tapas joints in Spain, and bustling food courts in China.
Somewhere along the way, I started mixing things together—combining sauces from one country with spices from another. People told me, “That’s so weird,” or “I don’t know how you can eat that.” But every time they took a bite? It always turned into, “Oh my god… this is actually amazing.”
